El “Día de la Morcilla” se celebra el último domingo del mes de abril. En esta fiesta se hace honor a la morcilla de Canillas, la cual se ha hecho muy popular debido a su sabor.Y es que la forma de aliñar el producto en esta zona le da un toque especial. Cada año, miles de personas se den cita en el corazón del pueblo, junto al Ayuntamiento, donde los canilleros reparten entre sus visitantes más de 300 kilos de una exquisita morcilla, elaborada al estilo alpujarreño, acompañada de un excelente vino del terreno.
